Recipe: Lentils-5 Delicious Dishes

We love our one pot cooking! We also love variety. Cook once and enjoy different dishes and flavours for the next few days. We used sprouted lentils which have more bioavailable nutrients. Lentils are high in protein, zinc, iron and calcium. This is a great way to incorporate lentils and more vegetables into your diet.
Lentils: Basic Cooking
2 cups sprouted lentils, uncooked
6 to 8 cups filtered water or vegetable broth
Lentil Preparation: Best to soak sprouted lentils overnight. Boil lentils 60 minutes or more until softened. Rinse in cold water. Change water. Add lentils back to pot with 4 cups of boiling water. Lentils should be completely covered by the water. You have the base for your lentil dishes.
โฐSave time - use regular lentils and no pre-soaking is required. Or use canned organic lentils and rinse well.
๐ฒVegetable Lentil Soup
1 cup cooked lentils (rinsed) 1 large onion, chopped 5 garlic cloves, minced 1 cup of squash, diced 1 large carrot, chopped 1 celery stalk, 6 grape tomatoes diced 6 cups of filtered water or vegetable broth, 1 tbsp. A+ Smoodees pumpkin seed powder. Blend onion and 5 cloves of garlic in blender. Set aside and add to soup mixture as desired.
๐ฒSoups: Place lentils and water in a pot and boil. Add vegetables and onion mix. Bring ingredients to a boil in pot; cover. Simmer on medium-low heat 60 minutes until lentils and vegetables are tender. Add water or stock as needed.
๐ฅVegetable Lentil soup: Serve as a whole food soup, use recipe above.
๐ฒCreamy Lentil Soup: Blend 2 cups of Vegetable soup above, in a small batch. Add 1 cup milk (we like cashew almond, hemp or coconut) or 1/2 cup raw cashews in 1 cup of water and 2 tbsps. butter, ghee or coconut oil in blender until smooth.
๐ฅVegetable Stew: use pieces of vegetables and lentils from the vegetable soup recipe above to make the stew. Add turmeric, cayenne pepper, nutmeg or your favourite spices. Add cubes of cooked sweet potatoes. Add 1 tbsp. pumpkin seed powder to thicken. Add boiled okra or your favourite veggies and fresh herbs (we love thyme, basil, oregano).
๐ Mediterranean Lentil Soup: 2 cups cooked lentils (rinsed), 1 large onion (chopped & blended), 5 garlic cloves (minced), 5 cups filtered water, 1 tbsp tomato paste mixed in 2 cups water, 8 tbsp cold pressed olive oil Salt and black pepper to taste, 2 tbsps balsamic vinegar. Place all ingredients in a stock pot. Boil ingredients (except balsamic vinegar) on low to medium heat for 45 to 60 minutes. Simmer until tender, add water or vegetable broth as needed. Stir in balsamic vinegar and serve.
๐ Lentil Dip: Use Mediterranean lentil soup mixture above to make the lentil dip. Blend 2 cups of cooked soup mixture until creamy with a pinch of salt, pepper or a few olives. Add water as needed to a creamy consistency. Add 1 tbsp pumpkin seed powder to thicken. Drizzle with warmed olive oil and dried parsley. Serve warm with crackers.
