Simple Coconut Moong Dal - Mung Beans

What is

Moong dal ?

It is the split version of green mung beans, with or without the skin.

Total Time: 30 minutes

Ingredients:

Basic Recipe:

1 cup moong dal (split skinned mung lentils/yellow colour)

3 cups water

1 x 750ml box coconut milk (save for step 2)

3 tbsp coconut oil or ghee

1/2 cup to 1 cup unsweetened coconut flakes

Pinch salt and black pepper to taste

1.Boil dal and water together for 10 minutes to slightly soften. Remove from heat and strain.

2. Add dal back to the pot with coconut milk, coconut flakes, coconut oil, salt and pepper. Boil on medium heat for 10 minutes, simmer for 10 more minutes or until tender and soft (to a porridge like consistency)

3. Split into 2 pots to make a savory or a sweet version if desired by adding all or any of the ingredients below on the savory or sweet list.

Consistency: You can have a thick or medium or thin consistency of the dal by adding less water or more water later. Be creative and eat this hearty moong dal anytime of the day . Breakfast, meals, as a dip with naan, bread or more.


Savory - Optional Ingredients

1 medium sized / ⅓ cup finely chopped onions, 1 medium size tomato - chopped, ½ inch ginger finely chopped or grated, ¼ teaspoon red chili powder or ¼ teaspoon cayenne pepper, ⅓ teaspoon turmeric powder (ground turmeric), 1 teaspoon cumin seeds, 4 to 5 small to medium-sized garlic - crushed lightly, ¼ teaspoon red chili powder or ¼ teaspoon cayenne pepper, 1 or 2 green chili flakes or powder to taste.

Cook and top with greens such as chopped Kale, sesame or black seeds.

Sweet - Optional Ingredients

Top with Cinnamon, nutmeg, cardamom, ground cloves. Stir in with a spoonful of nut butter for an unbelievably warm creamy protein packed treat. Add berries or chopped apples.

We like the sweet version to replace the ho hum oatmeal in the morning.
