Black Bean Quinoa Salad with Grilled Fish๐Ÿฅ—๐Ÿฝ

Catch of the Day with a Black bean quinoa salad packs a flavour punch!

Black Bean Quinoa Salad with Grilled Fish

1 can of black beans (drained/rinsed) or 1 cup cooked dried beans

1 red pepper diced and seeded

1 sprig of green onion or chives (sliced)

1 tbsp of olive oil

1/4 of a lemon or lime juice

Salt/pepper to taste

Optional: parsley, fresh dill, thyme or basil chopped

 

Cook quinoa to package directions until light and fluffy. Cool the quinoa.

Add the other ingredients to the quinoa in a large bowl and mix. Serve chilled or warm.

Serve with grilled wild salmon, rainbow trout or fish of choice.

Note: The fresh herbs really bring out the flavour of this dish. Our faves are fresh dill and parsley.

 

Fish such as wild salmon is a healthy, high-protein food. It contains omega-3 fatty acids, which are essential fats that our bodies don't produce on their own. Omega-3 fatty acids may decrease inflammation, reduce the risk of heart disease, helps maintain healthy joints and skin.
