Happy Trails Cookie ๐๐ฒ๐ณ
Ingredients
1 cup flour (we like spelt)
3 cups old fashioned oatmeal
3/4 tsp salt
1/2 tsp baking soda
4 tbsp melted butter, ghee or coconut oil
1/2 cup vegetable oil (avocado or grapeseed is our fave)
1/4 tsp cinnamon
3/4 cup brown or coconut sugar (substitute with date sugar)
2 eggs
1/2 to 3/4 cups trail mix (pre-made or make your own with granola, dried fruit (we like raisins, cranberries or cherries), nuts such as almonds, seeds or chocolate).
Optional: Dash nutmeg, splash of vanilla extract
Optional: Add 1 tbsp of pumpkin seed powder or protein powder
Method:
Mix butter/ghee/coconut oil, oil , cinnamon, nutmeg, vanilla. Stir well.
Add sugar, eggs and stir
Add flour, salt, baking soda, optional (protein powder) and stir
Add rolled oats
Stir in trail mix
Mix well and drop by 3 tbsp and flatten
Bake at 375 degrees for 10 minutes. Turn oven off.
Leave on tray in oven to cook another 5 minutes. Remove from oven to cool. Cookies should be moist and crumbly good.
