I Can't Believe it's a Black Bean Brownie!

One of our favourite guilt free desserts. Itโ€™s hard to believe itโ€™s packed with fiber rich ingredients such as black beans and oats.

Ingredients:

1 1/2 cups black beans ( 1x15 oz. can, drained and rinsed)

2 tbsp cocoa powder

1/2 cup quick oats (optional: gluten free)

1/3 cup maple syrup or honey

1 to 2 tbsp coconut sugar (optional: we like to omit but the kids like it sweet)

1/4 cup melted coconut oil or vegetable oil (avocado or grapeseed)

2 tsp vanilla extract

1/2 tsp baking powder

Pinch Cinnamon (may reduce sugar cravings)

Pinch nutmeg (has antioxidants, may increase libido ๐Ÿ˜‰)

Pinch sea salt

1/2 to 3/4 cup chocolate chips or broken dark chocolate bar (this is a must to make them chocolatey good)

Preheat oven to 350 F. Keep chocolate chips aside. Blend all other ingredients together by hand, blender or in a food processor. Blend well and stir in the chocolate chips. Spoon ingredients into cupcake holders or in a greased 8x8 pan. Bake muffins for 10 to 14 minutes. Or pan for 15 to 20 minutes. Let cool before eating. If any are left, store in a glass container or freeze. We also like to use these as mini birthday cakes! ๐ŸŽ‚
