๐Ÿต๐Ÿฅ’Non-Dairy Tzatziki - Creamy, Delicious and Guilt Free

1 cup cucumber , peeled and grated

1 1/2 to 2  tablespoons fresh dill (fresh dill makes this but can use dried)

1 cup cashews (raw, unsalted is best)

3/4 cup  water 

1 1/2 tablespoons fresh or prepared lemon juice

2 1/2 teaspoons distilled white vinegar

1 to 3 cloves garlic 

1/2 teaspoon Himalayan or sea salt

Black pepper to taste

Dried Oregano to taste

  Put the grated cucumber in a paper towel or dish towel, squeeze out the excess water until mostly dry. Set aside cucumber. 

    Note: drink the cucumber juice, itโ€™s not used in this recipe but itโ€™s full of electrolytes.. Keep the grated cucumber and dill aside.

  1. Blend all ingredients in a blender until creamy smooth. 

  2. Add cucumber and pulse until well mixed.

  3. Add dill, pulse until finely chopped. 

  4. Refrigerate to thicken and make it creamy.

NOTES - Recipe makes about 2 1/2 cups sauce.

Serve with veggies, crackers, bread, salad. Make it thicker and use in sandwiches or as a spread.
